This perfect weekender drink will have you craving warm spring/summer nights in no time. BTW – did you know the sun will start setting a 7pm soon? GOODBYE seasonal depression. See ya NEVER. No, but really. Is February hitting anyone else like super hard? January can be tough because it’s so dang long. I feel like by the time we make it to Feb we’re beyond ready to just skip to the good part. We’ve celebrated all the major holidays, we’re ready for a break from the kids school activities and homework, we’re sick of being cold when we go outside, we’re lacking some serious Vitamin D, our skin is dry, all the things. Spring just hurry up – please and thank you!

If you want to transport yourself to a month or two from now enjoying this refreshing beverage on your back porch with friends, then save this blog post for later and now. This drink is light, fruity, and has just the perfect amount of booze. The fresh blackberries and ginger beer make the perfect combo for a light warm weather beverage. You can throw it together in a just a few minutes, also making it the perfect drink for hosting guests! This fruity fresh cocktail is SO delish, you will be on your way to your 3rd before you can say blackberry.

(side note) isn’t she pretty too?!

INGREDIENTS:

  •  1.5 oz dark rum (like Gosling Black Seal Rum) or a spiced rum
  •  3.5 oz ginger beer, chilled
  •  1 lime wedge
  •  2-3 mint leaves
  •  5-6 fresh blackberries (+ extra for garnish)
  • I added a splash of Torani blackberry syrup too

HOW TO MAKE:

  1. Place lime and mint in a shaker and muddle by using a muddler or the bottom of a wooden spoon to smash the lime and mint together until juices are fully released
  2. Add blackberries to shaker and continue to muddle for 1- 2 minutes.
  3. Pour in rum (and splash of blackberry syrup if you have it), place lid on shaker and shake vigorously.
  4. Fill an old-fashioned glass about 3/4 full with crushed ice. Pour the contents of the shaker over the ice and top off with chilled ginger beer.
  5. Garnish with a fresh blackberry. Enjoy!
