Cozy Eats: Beer Cheese and Brats Potato Soup

Hi friends! Today I’m sharing a Cozy Eats: Beer Cheese and Brats Potato Soup with you all! This soup is insanely delicious and quite hearty so you won’t have worry about it not filling up the tummies in your family. Keep reading to see how ours turned out and find out how to make your own at home!

This all started because my dad starting seeing a new lovely lady a few months ago who also happens to be an amazing chef. All of the dishes I’ve had of hers are UNREAL. Y’all know that I love recipes and new festive foods so I was dying to collab with her on a Cozy Eats dish for this season. I asked her if she would help me make a unique and delicious potato soup recipe and low and behold: The Beer Cheese and Brat Potato Soup was born! I had so much fun being a part of this amazing creation and I couldn’t wait to share it with you all because you won’t find this secret delicious recipe anywhere else. Plus, she’s an actual professional sooo you’re welcome. Be ready to seriously impress whoever you’re whipping this up for!

This Beer Cheese Brat Soup is literally such a staple for this time of year. When the weather starts cooling down, I’m ALL ABOUT yummy soups that I can make huge batches of and keep in the fridge to eat all week long. Soup season is something I look forward to all year. I love that you don’t have to feel guilty about going back for seconds. I love that you can make enough to have it for dinner or lunch a couple times that same week. I love that you can slow cook it while you’re having a movie or wine night with friends. Everything about this season just gets me giddy y’all. And you KNOW how much I love food so I will continue raving about these different seasonal recipes until the day the good Lord takes me! With what it seems like the “last week of Winter” for here in TN, I thought you may want to squeeze this one in!

This particular recipe isn’t exactly difficult, but I will let you know in advance that there is quite a bit of prep work. I say this because you may want to do the chopping/prep ahead of time OR purchased pre-chopped veggies if needed. If you’re not in any rush, then this won’t be an issue for you at all. Trust me when I say that all of it is definitely worth it in the end when you try this amazing beer cheese and brats potato soup.

Now, let’s good to the good part.

INGREDIENTS/HOW TO MAKE:

One large onion minced

3 ribs of celery minced, save leaves for garnish

4 carrots shredded or ground in food processor

6 cloves garlic minced

1 shallot minced

2 ea Serrano pepper seeded and minced

1 can stout or dark beer

1 tbsp fennel seed toasted

1 tbsp mustard powder

3 tsp celery salt

5# Yukon gold potatoes 

4 cups chicken broth

3 cups heavy cream

3 cups shredded Colby jack cheese 

2# brats. Roast before if using raw

Sweat onion, celery, carrot, garlic and shallot and peppers until soft

Add all dry spices and stir until fragrant over medium high heat

Add beer to deglaze pan and simmer together for 3 minutes while stirring

Add chopped Yukon gold potatoes

Add chicken broth then heavy cream

Cook at light boil about 10 minutes, stir occasionally,  when potatoes are soft use a hand masher to mash some of the potatoes to create thickness. 

Add cooked brats, celery leaf, salt and pepper (smoked salt is a nice flavor if you have). Also use the cheese you love or have on hand. The creamier the better.
