Summer Eats: Delicious Potato Salad Recipe

Welcome back to one of my favorite topics to talk about, FOOD! I am such a foodie if you all haven’t noticed by now. I love finding new fresh recipes to share with you guys, putting funky twists on existing recipes, and hearing feedback on what y’all want to see! Recipes are always fun for me to blog about. This Potato Salad recipe is absolutely to DIE for y’all. My step-mom introduced me to this recipe and it’s absolutely DELICIOUS. If you’re a pasta salad fan, you’re probably going to like this recipe even more. If you love potatoes, this recipe is hard not to love. INGREDIENTS:

  • 5 pounds russet potatoes  cubed
  • 6 boiled eggs chopped
  • 1 jar kosher dill pickles diced – (keep juice!)
  • 1 jar salad olives 
  • 2 tbsp Mayo
  • 1 stick real butter cut in slices 
  • 16 ounces sour cream
  • 2 Tbsp Vinegar – white or apple cider
  • 1 tbsp yellow mustard 
  • Salt to taste 
  • Boil potatoes about 10 minutes or until they can be mashed with a fork. 

HOW TO MAKE:

  • Drain potatoes in a colander in the sink
  • While the potatoes are draining, take a big bowl and put the butter slices in the bottom then add the olives and pickles and chopped eggs
  • Pour the potatoes in on top of this stuff while still hot so they will melt the butter. 
  • Allow the potatoes and stuff to sit for about 15-20 minutes to melt butter and cool a little bit
  • Then add the mustard, Mayo, and sour cream and vinegar and salt to taste.
  • My secret is that I also add pickle juice.  Probably about 1/8 a cup. Also don’t add the whole thing of sour cream. Add it a little at a time. This will determine how creamy you want it. You may or may not want all 16 ounces.
