I don’t know about y’all, but after a savory dinner, there is nothing that I crave more than sweets. Momma has got to have her treat before bedtime. Now, I know what you all are thinking. If you’ve been following me over these past couple months, you know that health has been a huge focus for me. After having major abdominal surgery, finally getting cleared to be in the gym again, and revamping my diet, I am already feeling like a whole new me. However, what I’ve learned through this process is that you have to be okay with saying yes to your body sometimes. It’s absolutely amazing and so admirable to be disciplined in your workout schedule and eating, but it’s important to have balance.

This is an excellent treat if you’re looking to wow the family. After a nice long day of summer activities such as swimming, biking, playing in the yard, tossing the ball with friends, and soaking up that Tennessee sunshine that we love so much, you already know that we’re all craving a sweet treat with the views of the sunset. I was ordering Tiff’s Treats on the regular and then I was like “I should attempt this myself.” It saved me so much money but also I tweaked it to sub almond flour to make it lower carb and keto friendly. If you are constantly denying your body of what it needs, you may end up binging that bad food or sweets. We need to learn to be okay with treating ourselves once in a while. If sweets are really your thing, this goes for anything! If you want your cheat meal to be a juicy burger from your favorite local burger joint, then go get the burger. If its a big glass of wine at the end of a long work day, drink the wine. If its a stack of pancakes with syrup and all the goodies on a Sunday morning, eat that breakfast. We have to learn to allow ourselves to indulge in these special things in life! That’s why they are so much better in moderation. You appreciate these little cheat meals, cocktails, and sweets so much more when you’re not over-indulging in them all the time.

That’s why I’m here to share my Low Carb Peanut Butter Chocolate Chip Cookies recipe with you all!

Ingredients for Low Carb Peanut Butter Chocolate Chip Cookies

  • 1 1/3 cup almond, coconut flour and quinoa (scoop and level to measure)
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, softened
  • 2 tsp sweet leaf stevia
  • 1/2 cup (110g) coconut sugar
  • 3/4 cup (185g) creamy peanut butter (I use Skippy)
  • 1 large egg
  • 1 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees F. Line two 18 by 13-inch baking sheets parchment paper or greased aluminum foil. 
  • In a medium mixing bowl whisk together flour, baking soda, baking powder, and salt. Set aside.
  • Mix cream together butter, sugar, and brown sugar until combined. I use the kitchenmaid mixer with the paddle attachment.
  • Mix in the peanut butter then blend in egg and vanilla. Mix in slowly the flour mixture and mix on a low speed slowly.
  • Scoop your dough out shaped into balls then place on baking sheets spacing them 2-inches apart.
  • Use your for to flatten the cookies then the opposite direction to create a crisscross pattern.
  • Bake cookies for roughly 9 minutes.
  • Let cool on baking sheet 5 minutes then transfer to a wire rack to cool completely. Store cookies and an airtight container and eat within 2-3 days or freeze.
