Healthy Lunch Ideas: Greek Artichoke Salad Recipe

Hi loves! Today I’m sharing a Healthy Lunch Idea: My favorite Greek Artichoke Salad Recipe! We gorgeous gorgeous girls are still on our New Years Resolutions grind even well into February and we’re not planning on stopping anytime soon! Spring Break/Summer bod COMMENCED. Keep reading to see how I put together this delicious hearty salad that is absolutely perfect for meal prepping lunch for during the week!

INGREDIENTS:

  • 1 can quartered, marinated artichoke hearts; drained
  • 4 oz. feta cheese, crumbled
  • 4 oz. Kalamata olives
  • 1 cup peppers chopped
  • 1/2 pint grape tomatoes (optional)
  • 1/2 red onion, chopped thinly
  • 1/4 cup olive oil
  • 2 tbsp. wine vinegar
  • 1 tsp. dried oregano
  • 1 tbsp. lemon juice
  • marinated veggies from Jeff’s Garden

HOW TO MAKE:

  1. In a bowl whisk together olive oil, vinegar, oregano and lemon juice
  2. In a separate bowl, combine artichokes, feta cheese, Kalamata olives, peppers, tomatoes (optional), and onion
  3. Combine the mix with the dressing
  4. You can eat it as is OR serve with a spring salad mix to make it a little more filling

This recipe is full of flavor, healthy, and truly such a fan favorite in this household. If you’re a fan of artichokes, you absolutely love this recipe and crave it regularly! When I’m on a diet, I don’t really like to feel like I’m restricting myself. I hate even using the world “diet”. What I would rather say is when I’m focused on eating “real foods” from the earth and not fast-casual food or eating out. It’s truly when I feel my best and it also helps me to remember to eat during the week when I’m busy working, running the kids around, etc.!
