Easy Fall Dinner Ideas: Crack Crockpot Chicken

Hi friends! Today I’m sharing my Easy Fall Dinner Ideas: Crack Crockpot Chicken. If you’re looking for an amazing and easy dinner that the whole family will love, this one is for you! Keep reading to see how I made this recipe and how ours turned out!

The call is “Crack” Crockpot Chicken for a reason. It truly is addicting and we have been enjoying leftovers for days! I love this recipe so much because it requires super minimal prep work and then you just leave it to cook in the crockpot on LOW for 5-6 hours for the afternoon or 2-3 hours on HIGH if you’re in more of a rush!

Being able to go about my day and finish the rest of my organizing, errands, etc. while dinner cooks really is a lifesaver. Literally anyone can master a crockpot/slow cooker recipe! That’s why I’m so pumped to share this one with y’all today. Mind you, it doesn’t photograph the best but WOW is it good. Below is my Easy Fall Dinners: Crack Crockpot Chicken Recipe:

INGREDIENTS:

  • ½ cup low sodium chicken broth
  • 1 tablespoon ranch seasoning mix
  • 4 boneless, skinless chicken breasts
  • 1 block (8-ounces) cream cheese, at room temperature, cut up into 4 pieces for easier melting
  • 2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked to a crisp and chopped
  • chopped green onions, for serving
  • chopped fresh parsley, for garnish

HOW TO MAKE:

  • Pour chicken broth into slow cooker and stir in ranch seasoning mix.
  • Add chicken breasts to the slow cooker and stir around to coat chicken.
  • Cover with lid and set on LOW for 5 hours, or on HIGH for 2 to 3 hours.
  • When done, remove lid and shred chicken inside the slow cooker using two forks.
  • Stir in cream cheese and 1 ½ cups shredded cheddar cheese; stir until completely melted and combined.
  • Top with remaining cheddar cheese; cover with the lid and let the cheese melt.
  • Remove lid and sprinkle chopped bacon on top.
  • Garnish with green onions and parsley.
  • Serve with tortilla chips
