Fun fact: I grew up on salmon patties. Maybe it was a southern thing (it really is) or maybe it was one of the only things my mother knew how to cook. The jury is out on that one. Regardless I love a good salmon patty recipe, yes that’s what we call them below the Bible Belt. We just don’t call them salmon cakes. But since I live in the city now I guess I’ll change it up for y’all. So I’ve always loved them even when they were dry and overcooked. I would just toss some aioli and pickles on top and I’d be set. You guys must know I throw pickles on A LOT of food. So when it came time to create a new recipe for Primal Kitchen’s Chipotle Mayo, a lightbulb came on. I’ll try to create a spin on mama’s salmon cake recipe.
Salmon Cake Recipe
- Green Onions
- 2 cans boneless canned salmon
- Honey dijon
- Lemon Zest
- Olive Oil
- Primal Kitchen Chipotle Mayo
- 1 Egg
- Garlic
- Bread Crumbs
- Parsley
- Old Bay Seasoning
- Salt & Pepper
- Drain salmon cans and mix with seasoning and ingredients in a large mixing bowl. I eye ingredients but mix roughly 1/4 cup bread crumbs into the mixture.
- Ok here is where you can go a couple of different routes. When it comes to how you cook your patties I typically go between a couple of options. You can roll them into balls and flatten out on a frying pan OR you can cook them in the oven in a muffin pan. The pan seared method gives it a tad more crisp and flavor. Sauté the mixture flattened in a pan (coated with nonstick spray) with a tsp of olive oil on both sides for maybe 3-5 minutes on each side, or longer if prefer crispier. If you wanna go the muffin tin route, the clean up will be a lot easier. Set oven to 400 degrees. Spray muffin tin with nonstick spray and put mixture 2/3 full smashing down with fork. Bake for 15-20 minutes.
- Serve with Primal Kitchen Chipotle Mayo as dipping sauce or tartar sauce etc. I’m a weirdo and eat mine with pickles.
