Pressure Cooker Dinner Ideas are my JAM guys. The Ninja Foodi Pressure Cooker is amazing for so many reasons. My favorite think about it is that you can cook a whole bunch of food just like a slow cooker, but it takes almost a quarter of the time! Slow cookers are great because you get amazing flavor, but they usually take around 3-4 hours to cook minimum and that’s on high. You can get the same amazing flavors but with a Ninja Foodi Pressure Cooker, you can have a delicious meal on the table for your family in no time.

For this particular recipe, I was able to use the Ninja Foodi Pressure Cooker for the shredded chicken that turned out absolutely incredible. Because I was able to cook a whole bunch of shredded chicken, I am using it for not only this recipe but also for food preparation for the week! So you’re getting an amazing meal to put on the table right away, and able to store the remainder of the meat that you don’t use right away to implement into meals for the rest of the week. It really doesn’t get better than that, especially for busy moms like myself trying to balance it all throughout the week.

Ingredients:

Chicken recipe

  • 3-4 breasts (Shredded chicken from Ninja Foodi Pressure Cooker)
  • Garlic powder
  • Chili Powder
  • Cumin
  • Roasted Tomatoes
  • Chili Peppers

Burrito Bowl

  • Cauliflower Rice (I use Mexican cauliflower rice from Trader Joe’s)
  • Roasted Corn (I used roasted frozen corn from Trader Joe’s)
  • Jalapeños
  • Mexican Cheese
  • Cojita
  • Pepper rings
  • Black Beans
  • Lettuce
  • Onions, diced
  • Green onions
  • Cilantro
  • Salsa
  • Cilantro ranch (I used Tessemae’s)

Instructions:

For the chicken I put 1 cup of water in my Ninja Pressure Cooker then added the cooking trivet. Add the chicken (not too much, you want it to evenly fit on the trivet without overlapping). Top with spices and roasted tomatoes. Close the lid and turn on pressure cooker setting on HIGH then I did about 20 minutes but if the treats are frozen you’ll want to do 25-30 minutes depending on the size of the chicken breast. Wait until finished cooking and release the steam valve. Make sure you are clear of the valve because it will push out steam fast which could be dangerous. Then just shred away.

While the chicken is cooking get started on the bowls. I set out serving bowls with all the ingredients and leave it up tp my family to make their own but make sure to cook rice and beans. Those are both really easy and can be microwaved. I like to sprinkle a little bit of chili lime seasoning at the end.
