Hi everyone! Today I’m introducing my Easy Family Dinners: Lemon Garlic Butter Cod Foil Packet Recipe! If you all love fresh fish, you are going to love this recipe! I have many friends that are pescatarians that this is one of their go-to recipes when they want to cook for themselves and the whole family.
INGREDIENTS:
- Right Rice – Veggie Rice
- Fresh cod from your local grocery
- Fresh peppers
- Asparagus
- Artichokes
- Fresh lemon
- Medlee lemon or garlic butter
- Capers
INSTRUCTIONS:
- Cook Right Rice so it is ready to go onto the baking sheet
- Line baking sheet with aluminum foil (lay one sheet vertical and one horizontal) make sure that the sheet are cut to a little bit larger than the pan itself so you can wrap it all up at the end
- Spray with coconut oil or any type of not stick cooking spray
- Add you Right Rice Veggie Rice to baking sheet in a circle so there is room to place the fresh cod in the middle of the baking sheet – you want the rice surrounding the fish
- Place fresh cod in the middle of the bed of rice on the baking sheet
- Top with fresh veggies: I used sliced peppers and asparagus but you can use whatever veggies you prefer
- Coat all over with olive oil
- Season with your favorite seasoning mix
- Top with sliced lemon
- Add artichokes on top
- Scatter pre-portioned medlee lemon butter pieces throughout
- Wrap entire bed of fish and toppings into foil
- Place in oven and bake at 425-450 (depending on how quickly, and how hot your oven gets)
- If you like more of a charred flavor, I always go in and unwrap mine and broil it for a few extra minutes
- Take it out of the oven and upwrap
- Top with capers (if desired)
- Season with salt and pepper
- READY TO SERVE!
