With the girls heading back to school soon, having easy meals to make is one of the most important things for me. I enjoy cooking so much! Delicious meals don’t always have to take forever to cook or be complicated. All the more reason it’s super important for me to MAKE TIME to cook for my family. In addition to all that, it really does help me slow down and just be in the moment. Cooking is like art. To me it’s an opportunity to clear my mind and focus on what I’m doing. When so often my mind is in a million different places (I know you feel me on this mommas).

With fall around the corner, this hearty and delicious meal that actually is surprisingly low-carb and keto-friendly is perfect for the upcoming season that we all love so much! Football is starting soon and before we know it we will be cozied up by the fire with good food on the stove or in the oven. What more could you ask for? This is a great meal for fall entertaining as well if you love having friends and family over like we do! Check out the ingredients and how to make instructions BELOW:

INGREDIENTS:

  • avocado oil (olive oil will turn rancid at high temperatures so be sure to use high heat safe oil for cooking)
  • ground beef – you can also use bison
  • diced onion
  • garlic + onion powder
  • salt + pepper
  • shredded cheddar cheese
  • tomato paste

TOPPINGS:

  • dill pickle chips
  • diced onion (red, yellow, or white will all work)
  • diced fresh tomato (Roma tomatoes are our go-to)
  • shredded iceberg lettuce
  • yellow mustard

HOW TO MAKE:

OPTION 1:

  1. Add in cooked chopped bacon to the toppings
  2. Cook a few slices of chopped bacon in the skillet first. Remove the crispy bacon then add in the beef to brown in the bacon fat. YUM!

OPTION 2:

  1. Heat the oil in a 10” or larger cast-iron skillet over medium-high heat. Add the ground beef, onion and garlic, and spices. Brown the meat while stirring occasionally, about 6-7 minutes.
  2. Stir in the tomato paste and half of the cheese until well combined and the cheese is melty.
  3. Top with pickles, red onion, tomatoes, as well as the remaining cheese. Drizzle yellow mustard over the casserole and serve over a bed of shredded lettuce.

You can also use a different type of meat if you wish. Plant-based meat, ground bison, ground turkey, or chicken can all replace the beef used here!
