For those of you that strictly follow my blog for the recipes, you’ve been in great luck lately! Lol! Maybe I’ll start a cookbook? Would y’all read it? I don’t know what has gotten into me, but I have definitely been more on my cooking grind lately. I feel like it’s normal for every cook to have waves of motivation for getting creative in the kitchen, especially as a busy mom. A big part of it is that my whole family is full of foodies! We all love and appreciate food so much.
Even on the days that I don’t feel like cooking, I remind myself how grateful I am to be able to share this love language with my husband, my daughters, friends, and other family members! If you’re sitting here thinking to yourself “food isn’t a love language… what is she talking about?” WELL you ain’t from the South. Because down here, food and cooking is absolutely a love language. Also, there is really nothing better than gathering with your family at the end of a long busy day to just be together. Whether you’re at the dining table, or scattered sitting criss-cross-apple-sauce around the living room, being together enjoying a lovely meal and each others company is what matters!
This Cilantro Lime Chicken + Cauliflower Rice Recipe is on the list of favorites mainly because it’s delicious, quick, and EASY. Much like a lot of my other recipes. If you’re feeding a “hangry” family at the end of the day that don’t want to wait too long for food, this is your recipe. I was able to have dinner on the table within 15 minutes (aside from the marinating). This recipe is also completely Paleo-friendly and Whole 30 approved! The marinades from Primal Kitchen are outstanding and also healthy. Win win. And the Mexican rice from Trader Joe’s is so flavorful and healthy. If you don’t have a TJ’s nearby any cauliflower rice will do but you may have to spruce it up. We ate this recipe simple with just the chicken and rice but there are so many ways that you can get creative with it. A great idea would be to add the cauliflower rice to a Taylor Farms ranch kit to make a Mexican salad-like side for your yummy cilantro lime chicken recipe!
Ingredients:
- Trader Joes Mexican Cauliflower Rice
- Any fresh garnishes (scallions, parsley, etc.) or toppings/additions that you want (corn, beans, tomatoes, onion, etc.)
- Primal Kitchen Cilantro Lime Marinade (literally the best EVER).
- Chicken
Directions:
- Marinate chicken for at minimum 30 minutes but preferably overnight
- Set the grill to medium-high heat & let warm up
- Spray with non-stick cooking spray
- Place chicken onto grill
- Leave on until chicken is fully cooked through/browned with a white center
- While grill is heating or chicken is cooking start heating a pan for the rice on medium heat with olive oil
- Add rice and sauté with lid on to cook through
Add your Cilantro Lime Chicken to a plate and the Mexican Cauliflower Rice on the side and BOOM. You’re ready to serve! In literally 15 minutes! Hardly any prep, quick to cook, and absolutely delicious. Feel free to add salad or fresh toppings. We ate it just like that and OMG it was so good. I hope you all enjoyed this one!
