Cozy Eats: The Best Keto Pot Roast Recipe

Hi friends! Today I’m sharing my Cozy Eats: The Best Keto Pot Roast Recipe. If you love a good pot roast in the winter time, I am so with you sister. There is nothing better to make you feel all warm and cozy inside! Plus, it’s usually a huge family favorite. You may be thinking, pot roast doesn’t go well with my New Years resolution diet… BUT this one is Keto baby! So you can enjoy the best meal of the winter and not have to worry about breaking your diet! Let’s get to it.

This recipe is extremely flavorful, hardy, and delicious. I wasn’t planning on creating this for the blog so the photos aren’t the best but my husband loved the flavor so much that I just had to share. You can easily recreate this recipe in your Instant Pot pressure cooker, slow cooker, or dutch oven but I missed my crockpot so much that I went out and bought another one! (This one by Drew Barrymore is so stinking cute and modern too) This makes for an amazing Sunday night cozy dinner that the whole family will be wanting seconds. With all the snow we’ve been having in TN lately, it’s really been making me crave some warm hardy meals. I love this time of year because I have so much more motivation to get creative in the kitchen!

If you grew up eating pot roast, you know that it just reminds you of spending time to family. It was a meal that you requested from your mom after a long day of playing in the snow! With this recipe, you get all the flavors of the classic pot roast, without all the bad stuff! Keep reading for the recipe below:

INGREDIENTS:

  • boneless sirloin roast (after making this dish I’m gonna suggest a beef chuck roast because it falls apart and the sirloin one did not)
  • beef bone broth – I used Thai curry bone broth by LonoLife
  • zucchini
  • carrots
  • cauliflower – in place of potatoes
  • mushrooms
  • onion
  • minced garlic
  • garlic seasoning
  • Trader Joe’s Ajika Georgian Seasoning Blend (ground coriander, fenugreek, dried garlic, marigold if you wanna try and recreate)
  • Minced onion
  • Butter -I used ghee butter
  • fresh herb – parsley, rosemary, thyme etc.

HOW TO MAKE:

  • Line your slow cooker with “slow cooker liner” – Reynold’s Kitchen has a great line to make it mess free
  • Add your choice of beef broth
  • Add beef to slow cooker
  • Season meat all over with Garlic seasoning, Ajika Georgian Seasoning Blend from TJ, minced onions
  • Pour beef bone broth over the meat
  • Add in roughly diced onion
  • Add in the rest of your veggies (I used Cauliflower, zucchini, carrots, and mushrooms)
  • Pour the remainder of beef broth into slow cooker
  • Add minced garlic on top and seasonings on veggies
  • Add in butter
  • Turn slow cooker to high and cover with lid
  • Cook for 4 hours (since I was in a pinch, but would recommend 7 hours on low)
  • Serve with fresh herbs on top
  • Serve on plate and enjoy!

Some other quick tips:

  • To test if pot roast is cooked, just stick a fork into the pot roast and pull down. If the meat can be easily removed and shreds, the roast is done. If not, then stick it back in the Instant Pot oven or slow cooker and continue cooking until it can be shredded
  • If your pot roast seems overdone and leathery, try shredding the roast and soaking it into the gravy for about 10 minutes. (I had to cut ours like steak since it was sirloin)
  • Pot roast can be frozen, so it’s great to save if you want left overs over time and want to make a big batch!
