Easy Dinner Ideas: Summer Pasta Salad Recipe

Welcome back to one of my favorite topics to talk about, FOOD! I am such a foodie if you all haven’t noticed by now. I love finding new fresh recipes to share with you guys, putting funky twists on existing recipes, and hearing feedback on what y’all want to see! Recipes are always fun for me to blog about and share with you guys because they look different throughout our beautiful seasons of the year. I love playing with classics or guilt foods and recreating them in a healthier way.

For example, in the summer I usually crave fresh healthier foods. I crave savory and salty foods. Anything grilled. Full of veggies. Full of fresh seasonal fruits. You get the picture! Honestly, so different from what I crave in the winter time.

I have been dying to share my Summer Pasta Salad Recipe with y’all! This is a super filling recipe but you don’t have to feel bad about eating it. I am a huge fan of pasta salad, and this is one of my favorites. It’s also super easy to put together!

Summer Pasta Salad Recipe Ingredients:

  • Package of Farfelle or Rotini Pasta (I prefer a veggie pasta like quinoa or banza) boiled until soft
  • Veggies (I use peppers, broccoli, cucumbers but use whatever you want)
  • Artichokes
  • Hot Peppers
  • Spicy salami chopped
  • Italian Dressing (I prefer a healthier paleo option like Primal Kitchen)
  • Spices (I use garlic salt, pepper, Italian seasoning, a little crushed red pepper)

Instructions:

Pasta salad is as easy as it gets so you won’t see any lengthy instructions here. Turn stove on high, when starts boiling add pasta and boil til soft. Drain pasta and set aside in serving bowl. Chop up veggies, salami and artichokes and add to pasta. Toss with spices and dressing. Here is where I typically taste test to my liking of spices. Have at it 🙂 Chill pasta or don’t and ENJOY!
