Easter Cocktail: Carrot Juice Margarita

Hi friends! Today I’m sharing my Easter Cocktail: Carrot Juice Margarita. This was absolutely delicious and a great “healthier-for-you” cocktail for this Easter coming up. You guys know I’m all about sharing the go to brunching options for Easter and this is a great alternative to your regular ol’ mimosa. Keep reading to see how we made it! Plus, it’s super cute and… well, Eastery.

Can y’all even believe Easter is like, around the corner? Don’t get me wrong, I’m super excited about it! Ya girl has been readyyyy for Spring! This back and forth cold and warm weather here in Nashville is driving me CRAZY! Can we just make up our mind already?

INGREDIENTS:

  • Margarita salt (optional)
  • 5 ounces 100% bottled carrot juice
  • 3 ounces tequila blanco
  • 1 ounces fresh lime juice
  • 1 ½ ounce ginger liqueur (such as Domaine De Canton) or syrup*
  • Carrot tops for garnish or rosemary (optional)

HOW TO MAKE:

Lime rim of glass and place salt in a shallow dish

Lightly dip rims in salt

Add ice to glass (about half full)

Fill a cocktail shaker halfway with ice, add carrot juice, tequila, liqueur (or syrup), and lime juice

Shake until chilled (about 20 seconds)

Strain margarita into glass and garnish with a fresh rosemary sprig and/or carrot top
