It’s summer time which means it’s HOT, HOT, HOT! I am always looking for light & refreshing recipes to make for dinner. I have been OBSESSED with the Taylor Farm Chopped salad kits for the past few months and pairing them left and right but when they launched their new Tangerine Crunch Chopped Kit, I was instantly inspired to whip up a fun summer salad. I started brainstorming and my friend Jenna suggested a citrus shrimp. Duh, what a great idea. I had never made citrus shrimp before I usually play with lemon pepper or blackened spices so the shrimp always has a little kick to it. So I decided to change it up a bit.
I did get raw shrimp so the prep was a little longer than I expected deveining. Next time I will probably buy it cooked and without tails. So here we go:
Citrus Shrimp Salad Recipe
Ingredients
- 1 lb
- 1/2 cup fresh orange juice
- 1/4 cup lemon juice
- 3 tsp minced or pressed garlic
- 1 tbsp chopped onion (I used red) or shallot
- 1 tbsp fresh parsley chopped
- 1 tbsp garlic salt
- Pinch of red pepper flakes for flavor
- Salt and Pepper for taste at your discretion
- 1 medium orange cut into wedges/slices
- 1 medium lemon cut into wedges/slices
- 1 bag Taylor Farms Tangerine Crunch Chopped Kit
Instructions
- Whisk olive oil, both juices, garlic, onion, 1/2 of parsley, and red pepper flakes in a bowl. Pour into large skillet on medium heat and let simmer. Add shrimp and season with the salt, pepper and garlic salt. Cook until shrimp turns pink or just sauce for 5 minutes if using cooked shrimp to absorb flavor. Add the lemon and orange slices to the mixture. Top with remaining parsley.
- Mix Taylor Farms Tangerine Crunch Chopped Kit together in salad bowl.
- Serve both together on plate.
