It’s summer and it’s hotter than Satan’s house cat everywhere, especially in the South where I’m at. I can’t even go outside without gasping for air. The weather channel literally in quote said “You may need gills to breathe” when referencing the hot temps for this week. I find myself gravitating towards grilled food and recipes with fresh ingredients. The other day I was making a grilled salmon dish and was brainstorming what to make as a side and my MIL and I whipped up this summer corn salad recipe that my family devoured within minutes. Guys it was so good and I’m not just saying that because I made it. Here’s how to make it!
Summer Corn Salad Recipe
Ingredients:
- Corn (I think it’s better grilled)
- Tomatoes (I used cherry tomatoes sliced)
- Artichokes (I used grilled artichokes to give it a smoky flavor)
- Cucumber
- Red onion
- Kraft Roasted Garlic or Lemon Herb Vinaigrette
- Parsley
- Salt & Pepper
I never measure in full honesty. I use the taste test so feel free to experiment and use the ingredients to your liking. Also feel free to add things to it like peppers or even black beans. The vinaigrette compliments so many different foods, it’ll be hard to go wrong.
The best part is the instructions are a no brainer. Other than grilling the corn if you choose, the rest is maybe a prep time of 10 minutes. Honestly you can even shorten that if you buy precut onion. Just toss it all together and marinade in the vinaigrette. It is so refreshing and light and would even be a great meal on its own. I made extra hoping to eat it the next day and there was nothing left. The guys went back for thirds it was so good. I love it and I know you guys will too.
