GREEK LEMON CHICKEN SOUP

Who doesn’t love a good soup when they’re not feeling well, when it’s cold or just for the heck of it? Soup is one of my favorite things to eat because it’s filling and it’s comforting. I love to snuggle up on the couch with my bowl of soup and all feels right in the world. One of my hands down FAVORITE soups has been Taziki’s Greek lemon chicken soup, it can cure anything.
During the holidays my mother-in-law came across a Greek lemon chicken soup recipe that was straight identical. She made a big batch and said, “this should last y’all a few days.” Do you know how many days it lasted in my family? 1.5, that’s it. We devoured it. So, this time I made the recipe myself except I did not make the chicken from scratch like she did, I just bought the rotisserie chicken from Costco. I quadrupled the recipe. I froze half and kept the other half, and we have eaten it the past 2 days. I’m not even sick of it, it’s so good. You can alter the lemon and Greek seasoning to your taste. (I might’ve added a little more than she did) Guys it’s so good. Also, I always eat it when I’m not feeling well, and it is so soothing and comforting. Just try it, you won’t be disappointed.
Ingredients
- 2.5 Cups cooked & shredded chicken (You can buy it at Costco off the bone or make it yourself)
- 1 Quart Chicken Bone Broth, I use Bare Bones Broth
- 3/4 cup lemon juice (I’ve used fresh, and I’ve also used Santa Cruz lemon juice- both worked)
- 1/2 cup grated/shredded carrots (I buy them shredded)
- 1/2 tbsp fresh rosemary leaves, finely chopped
- 1/2 tbsp Greek seasoning
- 4-5 cups basmati rice (I use brown basmati rice to make it healthier. I also cook it in water with chicken bouillon to give it more flavor)
How To:
- Add all of these ingredients minus the rice in a large pot and stir.
- Bring soup to a boil. The reduce to medium heat. Let soup simmer for 10-20 minutes until carrots are soft.
- Add rice to the serving bowls and scoop in soup.
- Serve with either pita bread or roll.
