Spring Dinners: Air Fryer Cajun Butter Cod Recipe

How to make side carrots:

I used rainbow carrots from Trader Joes! These are whole carrots cut in half lengthwise if you have fat ones. This is so you have similar thickness for cooking evenly. Toss with olive oil. Salt and pepper. Roast on sheet pan, single layer 40-45 minutes at 425. Check for fork tenderness or the doneness you prefer. I like them browned on the edges. Drizzle with hot honey. The topping (gremolata) is parsley 1 cup, 3 cloves garlic, zest 2 lemons and their juice, 1 cup pistachios. Put all in food processor.  Salt and pepper to taste.
