THE POPPYSEED CHICKEN CASSEROLE THAT MADE MY HUSBAND PROPOSE
I have been making this poppyseed chicken casserole for years now because the second I ate it long, long ago I was hooked. This is one of the first dishes I made for my husband when we were dating and to this day he jokes it what sealed the deal. It’s definitely a treat dish and not something I make on the regular but I can attest to the fact that it heats up well as a leftover dish too. It is so good I will GUARANTEE you will go back for seconds or thirds. I’m gonna be honest when I made this and shared on IG stories the other day I had no idea that many people would request the poppyseed chicken casserole recipe so I didn’t capture the best food pics as my photographer wasn’t on hand but trust me and make it and everyone will think you’re a goddess. You can also substitute ingredients to make it more healthy as I have done in the past or go all in as is and savor it as a cheat meal. So here we go…
Poppyseed Chicken Casserole Recipe:
Grease up a 9×12 baking dish and preheat oven to 350 degrees. Boil 4-6 pieces of chicken for 20-25 minutes if whole and if it’s cut up in 2 inch pieces about 10 minutes. Add some salt to pot for flavor. Cut chicken into bite sized cubes on cutting board. Put the cans of soup in a mixing bowl and mix together with cut up chicken. (I also throw in some salt and pepper.) In a separate small bowl, mix 2 sleeves of crushed round crackers with melted butter and poppyseeds.
Pour chicken mixture in the greased dish and spread around. Top with crushed cracker mix. Put in oven for 30 minutes. Just enough time to clean up the mess while it’s cooking and pour yourself a glass of wine. It goes perfectly with some green veggies. My personal favorite is green beans or roasted zucchini.
This recipes serves 4-6 people depending on how many chicken breasts you use. You can also double the recipe and use a larger pan. If you’re doing more than 4 breasts you’ll definitely wanna use more than 2 cans of soup. I hope you guys fall in love with this just like our family has! Xo.
