Lemon Garlicky Shrimp Scampi Gluten-Free Pasta

I’ve been in a serious quarantine slump when it comes to cooking dinner. At first it was fun having the time to cook every meal and because I LOVE to cook, I accepted the challenge at hand with joy. But after awhile I just became bored with it. It was just so mundane. Rinse, cycle, repeat every day like Groundhog Day. I was in a slump for awhile and ate horrible. So I decided starting this week I was gonna challenge myself to create unique dishes I hadn’t made before and document them. Starting with some gluten free shrimp scampi.

I have been craving shrimp scampi and as always I try to make yummy cheat meals the “healthiest” I am able. So here goes. I hope y’all like it because without sounding cocky AF I thought it was SO good.​​​​​​​

Gluten Free Shrimp Scampi

Ingredients:

  • 1 lb Shrimp detailed and deveined (I used wild American shrimp)
  • Angel Hair or Spaghetti Pasta (I used Gluten Free Jovial brand)
  • 2 Tbsp Garlic – I used a lot of garlic so that’s up to you.
  • Butter – Medlee makes really tasty flavored butters like Lemon Herb. I used 3 of the Medlee cubes so 3 Tbsp or more for your liking.
  • Olive Oil
  • Garlic Salt
  • Lemon Pepper
  • Red Pepper flakes
  • 1/4 cup White Cooking Wine
  • Parsley
  • 1 small bunch of Kale or Spinach
  • Grape Tomatoes (I used 12-15 cut in half)
  • Lemon Juice – I used 2 lemons
  • Capers
  • Goat or Parmesan Cheese

How To:

  1. Boil pasta and set aside. If using Jovial I suggest combing through with a fork in the beginning of boiling so it doesn’t stick together.
  2. Sauté olive oil, 2 tbsp or 2 medley circles of butter and garlic on medium heat in pan til sizzles. Add shrimp. Add garlic salt and Lemon Pepper seasoning. Sauté on each side until it turns opaque with and pink, usually 2 minutes.
  3. Add cooking wine and red pepper. I used actual white whine (chardonnay) since I didn’t have cooking wine. Add chopped up kale/spinach and tomatoes and simmer with lid for a few minutes.
  4. Add a tbsp (or circle if using Medlee) of butter, the lemon juice and parsley. Also add more lemon pepper and garlic salt if you’d like. Add cooked pasta and toss in pan to absorb. Move to serving dishes when warm.
  5. When in dinner dishes, top with cheese or choice and capers.
  6. EAT!
