Holiday Recipe: Keto and Low Carb Mashed Parmesan Cauliflower 

Hi friends! Today I’m sharing my Holiday Recipe: Keto and Low Carb Mashed Parmesan Cauliflower! This was a huge hit at my Friendsgiving party and it’s one that I’m definitely taking into the holidays! It’s a great dish if you’re still struggling on what to bring to your family Thanksgiving too. It is a great “healthier” alternative to regular mashed potatoes and a unique twist! Keep reading to see how I made it 🙂

I am all about finding healthier-for-you recipes during the holiday season. With the back to back celebrating and handful of events that you’re attending almost every week during the months of November and December, it can be tricky to eat healthier! Don’t get me wrong, I love to indulge this time of year and don’t hold back. I love me some carbs and I’m not mad about it! You should definitely learn to give yourself some grace. I just throw an extra workout or two in there and BOOM good to go.

That’s why I was so extra stoked when I found this Cauliflower Mashed Parmesan Recipe! I am a huge mashed potato lover and it is one of my favorite carbs of the season. Any chance that I can make them a little healthier so I can indulge more is a yes from me! Check out the ingredients as well as how to make them BELOW:

INGREDIENTS:

  • 1 pound cauliflower, cut into small florets or riced
  • 1/2 teaspoon salt, divided
  • 2 tablespoons butter
  • 1 cup parmesan cheese, grated
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon truffle oil
  • 1 tablespoon parsley leaves, packed full
  • Optional: additional grated parmesan cheese and parsley for garnish

Quick Tips: I would add a little more butter, parm and salt for more flavor but that’s all depending on your diet. Also a tip from my friend @caraclarknutrition is that cauliflower doesn’t retain heat so make sure to heat up immediately prior because I did it too early for our #friendsgiving and it was served cold.
