Hi hungry friends! Today I’m sharing a SUPER YUMMY recipe that I stumbled across a few weeks ago and am absolutely loving. Inspired by the one and only Cameron Diaz – my girl! This Mushroom Crostini Recipe is to die for and makes for such an amazing holiday appetizer idea. Keep reading to see how to make it and how ours turned out!
When I tell you my assistant and I could not stop eating these… they were that good. I could have eaten the entire plate of them. These would be such a hit at a holiday party and/or just for when you’re hosting friends and family in town this season! Unique and delicious and I guarantee it’s something they haven’t tried before. ‘m not a huge mushroom fan and I LOVED this recipe so just trust me on this!
INGREDIENTS:
3-5 Cups Sliced Mushrooms (baby bella work well here)
1 Medium Sweet Onion (sliced into strips)
4 Sprigs Fresh Thyme
4 oz Goat Cheese
1 Jar Jam ) I used Balsamic Shallot and she used Fig Jam)
1 Baguette
1 Bottle Cabernet (or balsamic vinegar) she used her wine Avaline
HOW TO MAKE:
- Lightly coat crostini pieces with olive oil spray
- Add crostini pieces to a baking sheet and bake until slightly cripsy/golden
- Slice up your onions and mushrooms
- Add a drizzle of olive oil to 2 separate pans
- Cook down onion and mushrooms + salt
- Add butter to mushrooms + salt
- Add a splash of wine or balsamic to onions (cook until they start to caramelize)
- Add onions to pan with mushrooms once cooked down, mix together
- Add your crostinis to a plate and coat with jam
- Mound with onion/mushroom mixture
- Top/garnish with rosemary, sea salt
- ENJOY!
