High-Protein Sausage Breakfast Bowl Recipe: A Healthy & Easy Morning Meal

If you chop your veggies fresh all the time, I commend you. Now and then I will, but Trader Joes has a mixed bag of frozen veggies that is absolutely perfect for meals like this! It’s a staple in our household and makes it super easy to add healthy veggies to any meal. They are still very fresh and delicious!

PROTEIN PACKED BREAKFAST BOWL:

  • Minced garlic
  • Olive oil
  • Frozen or fresh assortment of veggies (whatever your favorites are)
  • Swaggerty’s Breakfast Sausage Links
  • Everything Bagel seasoning
  • Salt & Pepper
  • Avocado
  • Right Rice (or whatever your favorite protein packed rice is)
  • Spicy Chipolte sauce and/or your favorite hot sauce

HOW TO MAKE:

  • Heat a drizzle of olive oil in a pan on medium-high heat
  • add minced garlic
  • saute until fragrant
  • Add veggies
  • cook until veggies are soft/charred, onion is transparent
  • transfer to bowl
  • on a cutting board, cut your sausage links into bite sized pieces
  • add another drizzle of olive oil
  • add sausage to same pan you cooked veggies in
  • cook until fully cooked through / charred
  • add veggies back to pan
  • stir to combine
  • add all your seasonings
  • stir and set aside
  • cook your rice in a separate pot

Once rice is done, add salt and pepper and plate while hot. Then top with your veggie and sausage mixture. Add spicy chipotle sauce and/or hot sauce on top. Sprinkle with Everything Bagel Seasoning. Serve!
