If you chop your veggies fresh all the time, I commend you. Now and then I will, but Trader Joes has a mixed bag of frozen veggies that is absolutely perfect for meals like this! It’s a staple in our household and makes it super easy to add healthy veggies to any meal. They are still very fresh and delicious!

PROTEIN PACKED BREAKFAST BOWL:
- Minced garlic
- Olive oil
- Frozen or fresh assortment of veggies (whatever your favorites are)
- Swaggerty’s Breakfast Sausage Links
- Everything Bagel seasoning
- Salt & Pepper
- Avocado
- Right Rice (or whatever your favorite protein packed rice is)
- Spicy Chipolte sauce and/or your favorite hot sauce
HOW TO MAKE:
- Heat a drizzle of olive oil in a pan on medium-high heat
- add minced garlic
- saute until fragrant
- Add veggies
- cook until veggies are soft/charred, onion is transparent
- transfer to bowl
- on a cutting board, cut your sausage links into bite sized pieces
- add another drizzle of olive oil
- add sausage to same pan you cooked veggies in
- cook until fully cooked through / charred
- add veggies back to pan
- stir to combine
- add all your seasonings
- stir and set aside
- cook your rice in a separate pot


Once rice is done, add salt and pepper and plate while hot. Then top with your veggie and sausage mixture. Add spicy chipotle sauce and/or hot sauce on top. Sprinkle with Everything Bagel Seasoning. Serve!
