With fall, back to school, and daily life chaos back in full swing, cooking has been an essential part of our daily routine. Easy cooking is imperative considering the hours of free time in my day are extremely limited this part of the year. However, cooking is a way that I share love with my family and friends! I wouldn’t have it any other way.
Maybe I’ll start a cookbook or at least a digital version? Would y’all read it? I don’t know what has gotten into me, but I have definitely been more on my cooking grind lately. I feel like it’s normal for every cook to have waves of motivation for getting creative in the kitchen, especially as a busy mom. A big part of it is that my whole family is full of foodies! We all love and appreciate food so much.
Even on the days that I don’t feel like cooking, I remind myself how grateful I am to be able to share this love language with my husband, my daughters, friends, and other family members! If you’re sitting here thinking to yourself “food isn’t a love language… what is she talking about?” WELL you ain’t from the South. Because down here, food and cooking is absolutely a love language. Also, there is really nothing better than gathering with your family at the end of a long busy day to just be together. Whether you’re at the dining table, or scattered sitting criss-cross-apple-sauce around the living room, being together enjoying a lovely meal and each others company is what matters!
Y’all know I’ve been on a health kick lately too. I have fallen in love with the gym and working out again, which means eating healthy has been a big part of my focus too. That’s why today I’m sharing this Easy Smoked Salmon Avocado Low Carb Toast Recipe + Goat Cheese and Green Sprouts. I love this particular recipe because you can literally eat it for breakfast, lunch, or dinner! It’s even great for a snack (if you have a big appetite like I do). Keep reading for the ingredients I used and the instructions below:
Salmon Avocado Low Carb Toast Ingredients:
- Sola Low Carb Bread for toast
- 1/2 an Avocado
- Cracked Black pepper
- Goat cheese crumbles
- Hot n’ Spicy green sprouts (I got them at Whole Foods)
- Everything bagel smoked salmon from Trader Joes
- Capers
- Fresh lemon or lemon juice
Instructions:
- Toast Sola Low Carb Bread
- Spread half of avocado onto bread
- Sprinkle cracked black pepper and goat cheese onto avocado
- Sprinkle some hot n’ spicy green sprouts next
- Layer with smoked everything bagel salmon from Trader Joes
- Top off with capers and lemon juice
