Hi everyone! Today I’m sharing my delicious Easy Family Dinners: Taco Stuffed Zucchini Boats Recipe. This recipe is similar to the pepper boats recipe that I shared a while back, but oh man the zucchini gave it a whole new flavor! Keep reading to see how our turned out and how we made it!

Y’all know that I’m always raving about the Ninja Foodi Grill. They are actually having some AMAZING Black Friday Deals on their different grills which I will link HERE for you to explore. My MIL used the Ninja Foodi Grill to cook these babies and I feel like it just encapsulates so much flavor no matter what you’re making! Below I’m sharing what ingredients you’ll need as well as how to make it!

WHAT YOU’LL NEED:
- 5-7 zucchinis depending on how many people you’re cooking for
- Ground beef or turkey
- Canned corn (drained)
- Diced peppers
- Black beans, drained
- Spicy taco seasoning
- Frontura taco sauce (or whatever brand)
- Rotel diced tomatoes with lime juice & cilantro OR salsa
- Olive oil
- Salt & pepper
- Fresh lime for topping with lime juice
- jalapeno pieces for topping

HOW TO MAKE:
- scoop out zucchini center and set aside
- cook ground beef, corn, beans and diced red peppers over medium high heat
- mix
- drain & return to pan
- mix in your favorite taco seasoning (we used a spicy seasoning mix with Frontura sauce)
- pour in 1 can of Rotel diced tomatoes or salsa
- mix it all together to soak in flavor
- cover zucchini boats with olive oil and salt & pepper
- bake in oven on 350 for 15 minutes (or Ninja Foodi Grill like we did)
- once finished take out for filling
- scoop ground beef taco mixture into each boat
- top with shredded cheese and jalapeno slices or any Mexican toppings (if desired)
- Put back in Ninja Foodi or oven to roast for a few minutes so the cheese melts

So easy and SO tasty! Seriously 10/10. If you’re going to cook one last meal before you start preparing for Thanksgiving, this is a perfect easy meal with barley any clean up or prep!
