Hi hungry friends! Today I’m sharing my Easy Dinners: Mediterranean Salmon Foil Recipe with you all. I am always a fan of a delicious and fresh salmon recipe, and this one has a great flavorful twist that you’ll be sure to love! This was a hit with the whole family so be sure to keep reading to find out the ingredients and how to make.
I love mixing in fish recipes at least once a week when I can. It’s a nice switch up from the typical chicken or beef that is included in our meals weekly! I love how a good fresh fish meal leaves you feeling light. When the weather starts warming up, I crave fresh fish even more! Something about it reminds me of being at the beach. Anyone else make a point to ONLY order seafood when they go anywhere south of the mason dixon line? Well, yeah. That’s me.
This insanely easy Mediterranean Salmon Foil Recipe will have you feeling like you’re back in that beach breeze in no time. It’s incredibly easy, super flavorful, and ready in a jiffy! Plus, it doesn’t dirty too many dishes. Which, I love. Check out the ingredients BELOW:
INGREDIENTS:
- 4 salmon filets (about 1.75lbs)
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 pint cherry tomatoes, sliced
- 1 cup pitted kalamata olives, sliced
- 1 cup artichoke hearts, diced
- 4 cloves garlic, roughly minced
- 1 lemon, juiced
- 2 tbsp olive oil
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup crumbled feta
- 3 tbsp fresh dill
HOW TO MAKE:
- Preheat oven to 400F and line baking sheet with parchment paper.
- Boil a pot of water & add RightRice (made from vegetables – a little bit healthier than regular rice)
- Dice vegetables of your choice: I used peppers, tomato, olives, artichokes, and a large squeeze of lemon juice
- Add all veggies to a bowl
- Mix in a tsp of minced garlic
- Add salt and pepper, green goddess seasoning blend (from Trader Joes), oregano
- Add a large drizzle of olive oil
- Mix all together
- Prepare a piece of aluminum foul over a baking sheet
- Add a bed of your rice
- Add salmon (if it has skin, skin side down) on top of the bed of rice
- Season salmon with salt, pepper, and butter
- Add veggie mixture on top of salmon mounding it
- Wrap the foil packets up so the salmon, rice, and veggie mixture is wrapped in the aluminum foil
- Bake for 18-20 minutes or until salmon flakes with fork. Unwrap packets and top with crumbled feta and dill
- Serve immediately!
