Hi hungry people! Today I’m sharing my Easy Dinners: Kohlrabi Noodles with Bacon & Parmesan Recipe. This recipe was so quick, easy, and delicious! There aren’t a ton of ingredients and it’s pretty simple to make. Keep reading to see how I put it together!
If you’ve never had Kohlrabi Noodles, they are absolutely delicious. The natural sweetness of Kohlrabi compliments the other ingredients so nicely! I got all of my ingredients from Trader Joes (duh my fave), but you can find similar items at whatever your favorite grocery store is!
I’m all about easy tasty dinners as y’all know. With the girls in school and dance/dance competitions in full force, it’s great to have a meal that I can put together quickly and enjoy. This is one you could totally double the recipe and use for meal prepping too if you want to enjoy it throughout the week.

INGREDIENTS:
- 3 kohlrabi bulbs, trimmed and peeled
- 4 slices bacon, cut into small pieces
- 1 tablespoon olive oil, or as needed (Optional)
- salt to taste
- 2 tablespoons butter
- ⅓ cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley (Optional)
HOW TO MAKE:
- Step 1: Cut kohlrabi into thin noodles using a spiralizer.
- Step 2: Heat a large skillet over medium heat. Brown bacon and onion, until bacon is beginning to crisp and onion is caramelized but not burning, 10 to 12 minutes. Transfer bacon and onion to a small bowl, reserving 1 tablespoon bacon grease in the skillet.
- Step 3: Add kohlrabi noodles to the skillet and season with salt. Cook noodles over medium heat, stirring occasionally, until they begin to wilt down and soften, 12 to 14 minutes. Stir in butter until melted. Add in bacon and onion mixture and stir in 1/2 the Parmesan cheese.
- Step 4: Serve immediately topped with remaining cheese and parsley.
