Hi everyone! Today I’m sharing my Easy Dinners: Air Fried Elote Corn on the Cob Recipe! If you’ve been following my recipes, you know that I’m all about healthy, delicious, and EASY.
With spring around the corner, having easy, fresh, and healthy meals to make is one of the most important things for me. I enjoy cooking so much! Delicious meals don’t always have to take forever to cook or be complicated. They can actually be really simple. When you revert back to simpler times when good food meant fresh veggies with earth’s natural herbs and seasonings, you figure out that is really the backbone of all the most delicious meals.
It’s easy to get caught up in processed foods full of artificial flavors and nonsense in todays world – trust me, when we’ve all had a long day we cave into this sometimes! BUT all the more reason it’s super important for me to MAKE TIME to cook for my family. In addition to all that, it really does help me slow down and just be in the moment. Cooking is like art. To me it’s an opportunity to clear my mind and focus on what I’m doing. When so often my mind is in a million different places (I know you feel me on this mommas).
This Easy Dinners: Air Fried Elote Corn on the Cob Recipe is one of my very faves because they remind me of the Mexican street corn that I always order from one of my favorite restaurants.
Air Fried Elote Corn on the Cob Recipe:
- 4 corn on the cob
- 1 teaspoon chili powder
- ⅓ cup sour cream
- ¼ cup cilantro
- ¼ teaspoon kosher salt
- ¼ teaspoon ground pepper
- 2 tablespoon butter
- ½ cup cotija Cheese
- lemon optional
How to Make It:
- Preheat the air fryer to 400 degrees.
- Chop the cilantro and set aside. Melt the butter in a medium bowl. Using a pastry brush, coat the corn on all sides. Reserve the remaining butter to prepare the sauce.
- Place the corn into the air fryer basket and cook for 10 minutes. Flip or turn the corn to cook the corn evenly while cooking.
- In a medium bowl, combine the salt and pepper, melted butter, chili powder, and sour cream.
- Remove the corn from the air fryer and apply the sauce. Pour the cotija cheese in a large plate, apply the cotija cheese to the corn by either rolling the corn in the cheese or sprinkling the cheese over the corn. Finish it off by adding the cilantro and squeezing a little lemon juice for extra zest. Finally, ENJOY!
