Hi everyone! Today I’m sharing my Easy and Delicious Pumpkin Pie Protein Balls. These are an amazing and quick snack for when you need something to fill up your stomach. What’s better? They totally satisfy your pumpkin fall cravings too. Whether you have one after your morning workout, while you’re running around on the go, or for a late night healthy snack, you will love this quick delight of a recipe! If y’all have been following me, you know that I’ve recently gotten back on my health grind. I am loving every minute of it! I feel so much better all around. I’m sleeping better, happier, and am more energized throughout the day. It’s crazy how switching around a few things in your diet and building strength in your body at then gym can transform your life. Having said that, it is hard for me to make sure I’m getting proper protein and nutrition in my daily meals when I’m running around like a crazy person all day every day. If I was out running errands during the day, I would normally just sweep through the Chick-Fil-A drive thru! Now, I try my best to plan better and either eat a healthy meal before I conquer my to-do list OR I make sure I have a healthy snack/lunch available to take with me.
I highly recommend simply keeping a tupperware full of these in the fridge so you have them available to you to grab and go whenever you need them! I love making them when I meal prep on Sundays so I have them ready to go for the week. You can easily make a batch of 5-7 protein balls with this recipe, so you can count on having one once a day if you’d like!
INGREDIENTS:
- Oats
- Pumpkin puree
- Chocolate chips (I used Lilys no added sugar baking chips / keto friendly)

- Hemp and/or chia seeds (optional)
HOW TO MAKE:
- add 1 cup of oats
- 3/4 cup of pumpkin puree
- 3 scoops of protein powder
- add 2 tbsp of chia seeds (if you choose to add)
- add 2 tbsp of hemp seeds (if you choose to add)
- mix all ingredients together
- form into 1-2 inch balls
- place in fridge for around 30 minutes to allow protein balls to form a more solid consistency
