Hello hungry friends! Today I’m sharing my Delicious Air-Fried Zucchini with Parmesan Recipe with you all and y’all… it is mouth watering goodness.
Y’all know that I am all about the “healthier” recipes right now. If it’s healthy and delicious, I’m all about it! Especially if the whole fam loves it, then that’s a win all around! This is one of my favorites in particular because zucchini recipes are the bomb. You can literally put zucchini with just about anything and it’s amazing. There are so many fun little twists that you can put on it as well! You can make a whole meal out of it, make it an appetizer, a snack, breakfast, lunch, or dinner – you name it! If you love veggies and savory snacks, you’ll love this roasted zucchini recipe.
Another great thing that I love about this recipe in particular is that there is no deep frying or sautéing of any kind involved! You simply wash, cut, and season your zucchini and then throw it in the air fryer. The air fryer does all of the magic! If you like your veggies more crispy (which I usually do), you can always leave it in a bit longer. Air-Fried Zucchini with Parmesan INGREDIENTS:
- 4 zucchini, quartered lengthwise
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder or garlic salt
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoon chopped fresh parsley leaves
DIRECTIONS:
- Start your air fryer and let it heat up. I use a Ninja Foodi Grill. Coat it with nonstick spray.
- In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste. I use a Italian seasoning blend I had on hand.
- Place zucchini onto prepared baking sheet. Drizzle with olive oil (I used Primal Kitchen olive oil spray because its thicker than the aerosol) and sprinkle with Parmesan mixture. Place in air-fryer until tender, about 10 minutes, or for 2-3 minutes if you want them more crisp and golden brown.
- Serve immediately, garnished with parsley or more parmesan, if desired.
