Hi friends! Today I’m sharing an AMAZING dinner recipe: Marry Me Chicken with Sun Dried Tomato Cream Sauce. Y’ALL. If your significant other wasn’t obsessed with you already, they will be after you make them this. Keep reading to see how to make it! It’s super easy and can be made all in one pan 🙂
My husband literally is obsessed with this meal. He is a HUGE sun-dried tomato fan and really just couldn’t get enough of this. I swear he would have ate the whole skillet. I made his keto-friendly (without parmesan cheese, which you will see in the ingredients), but you can choose whatever floats your boat! If you’re looking for a more hearty addition you can also add noodles as well. I will say though, this was quite filling on it’s own!
This is the perfect easy one pan chicken to make your significant other on Valentine’s Day coming up, or just any night of the week! Believe me, he will be very gracious. Check out how we made it below!
INGREDIENTS:
- 3 large boneless, skinless chicken breasts
- salt
- freshly cracked pepper
- 2 tbsp of olive oil
FOR SAUCE:
- 2-3 cloves of garlic
- 3/4 cup of chicken broth
- 1/2 cup heavy cream
- 1/3 cup grated fresh parmesan cheese
- 1/2-cup sun-dried tomatoes
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes
- fresh basil
HOW TO MAKE:
- preheat oven to 375 degrees, skillet will need to sit in center of the oven so adjust racks as needed
- place chicken breasts on cutting board and trim as needed, pat dry with paper towel
- generously season tops of chicken with salt and black pepper, flip and repeat
- heat cast iron skillet over medium high heat, when warm add olive oil and cover surface
- when oil is hot, place chicken breasts in skillet, sear for 3-4 minutes or until lightly golden in spots
- flip and sear for 3-4 minutes more, transfer to plate or set aside
- using the same skillet for chicken, turn heat to medium low and add minced garlic
- saute garlic 1-2 minutes or until fragrant
- add chicken broth to skillet and stir
- move skillet to cool stovetop and then add heavy cream
- whisk or stir heavy cream in gently
- once blended, sprinkle parmesan into mixture and gently stir until melted
- return to skillet to hot burner and continue stirring mixture for a minute or so
- add sun-dried tomatoes, dried oregano, and red pepper flakes to cream sauce and stir
- bring sauce to a slow simmer over medium low heat, return chicken to skillet
- flip chicken breasts to coat all sides in sauce, then transfer entire skillet to oven
- bake dish 12-15 minutes, continue cooking until meat thermometer reads 160-162 Fahrenheit when inserted into the thickest part of the chicken
- carefully remove skillet from oven and set aside
- spoon sauce from skillet over top of chicken, then allow to rest/cool for 5 mins
- after about 5 mins, you can serve!
- top chicken with remaining sauce from skillet and garnish with basil. ENJOY!
